Mr. P's version is made by hand in Old Chatham in the Hudson Valley from four natural ingredients: ripe pears, pure cane sugar, lemon juice, and cinnamon. It holds its own on a cheese board beside a wedge of brie or a sharp cheddar, where the warm spice and fruit sweetness do their quiet work.
