The Marmellata is what happens when you take the British marmalade tradition seriously. Three citrus fruits — oranges, grapefruit, lemon — cooked with pure cane sugar into a loosely-set preserve, medium-cut peels still intact, the brightness and bitterness both present. Made by hand in Old Chatham, NY. It belongs on buttered toast with a good morning tea, but it earns its way onto a cheese board beside a soft goat or a semi-aged pecorino. It's the kind of condiment with a point of view.
