The Hermione Peony is named for a certain kind of cool, marble-like beauty — its petals broad and layered, veined in pale blue-gray like fine Italian stone, each one tipped in deep navy. It is the most architectural bloom in the collection, substantial in scale and serious in color, and it commands any surface it occupies. Here in Old Chatham, we cut peonies for the table all through June, but this one — in its cool blues — reads less like a garden flower and more like something you might find in a Venetian palazzo.
